How to Make My Great Grandma’s Delicious Pizzelles

Watching my mom make pizzelles growing up is one of my favorite Christmas memories. As soon as the lemon aroma filled the house, us girls found ourselves wandering into the kitchen to talk to mom about life and snack on a cookie or two (or three, or four…). Even though pizzelles are an Italian cookie, this recipe comes from my Swedish great grandma Evelyn.

Pizzelles are a tradition in our family; my mom even uses her Grandma Eveyln’s original pizzelle iron every year. And then when us girls got married, our aunts gifted us with a pizzelle iron of our own, a sweet family tradition I’m looking forward to carrying on.

I’m so happy to be able to share this recipe with all of you, and I look forward to the day when I can have these pizzelles in the hotel lobby for our guests to enjoy!

PIZZELLE IRON

The most important thing you will need to make pizzelles, is a pizzelle iron. Most irons make two cookies at a time.

Here is the pizzelle iron I use.

INGREDIENTS

Then gather your other ingredients:

  • 6 eggs
  • 3 ½ cups of flour
  • 1 ½ cups sugar
  • 1 cup melted butter
  • 4 tsp baking powder
  • 1 tbsp lemon extract
  • 1 tbsp vanilla extract*

*You could also use 2 tbsp of lemon extract instead of vanilla if you really like lemon, but I use 1 of each.

DIRECTIONS

  1. Plug in your pizzelle iron to preheat
  2. Mix the flour and baking powder in separate bowl
  3. In a mixing bowl beat the eggs
  4. Add sugar and beat until smooth
  5. Add cooled melted butter and extract
  6. Sift dry ingredients and slowly add to egg mixture
  7. Spray your pizzelle iron with cooking spray
  8. Drop 1 tablespoonful onto each press, hold for about 20 – 30 seconds (this may take a little trial and error to get the right timing for your press)
  9. Remove the pizzelles and let them cool*

*Helpful tip: I use a fork to gently remove the pizzelles from the iron. The pizzelles will be soft and bendable at first, but will harden as they cool.

This recipe makes about 12 dozen pizzelles!
