THE BEST PUMPKIN COOKIE RECIPE

Being on the go, spending so many evenings and weekends at the hotel, it’s important to have tasty snacks to keep us going! This time of year, I admittedly join in on the pumpkin craze and make a big batch of pumpkin cookies! This particular recipe is both easy and delicious!

And while I do love a good piece of pumpkin pie at Thanksgiving, I’ll admit, I’m not a huge pie person. So, if you’re like me and love pumpkin, but maybe not pie, you’ll want to try these cookies! These pumpkin cookies are the perfect dessert to take to a Friendsgiving, Thanksgiving, or just to have in the house! But be careful; this recipe makes a lot of cookies and they have a tendency to become addicting!

INGREDIENTS

  • 3 ½ cup flour
  • 2 ½ cup oatmeal (quick or old fashioned)
  • 1 ¾ tsp. baking soda
  • 2 tsp. cinnamon
  • 1 ½ tsp. salt 
  • 3 ½ sticks of margarine or butter, softened
  • 1 ¾ cup sugar
  • 1 ¾ cup brown sugar, packed
  • 1 can (15 oz) pumpkin
  • 2 large eggs
  • 1 ½ tsp. vanilla
  • 1 ½ cup chopped nuts (optional)

HOW TO MAKE THEM

  1. In a separate bowl, mix flour, oats, baking soda, cinnamon, and salt.
  2. In a large bowl, beat butter and both sugars until fluffy. (I prefer using my KitchenAid mixer with a cute mixing bowl!)
  3. Add pumpkin, eggs, vanilla, to butter and sugar, mix well.
  4. Gradually add flour mixture, add nuts (optional, I usually don’t add nuts).
  5. Put cookies on a baking sheet with parchment paper and bake at 350° for 14 – 16 minutes until lightly brown on top. (Dane got me these cookie scoops last year and now there’s no turning back!)
  6. Let cool and frost with desired icing (I don’t normally frost them, but you definitely can).

Not only do these cookies taste delicious, they are also fun to make, especially with Phineas! So, whether you make these for a fun event, or just to have at home, I hope you enjoy them as much as much family does!
